Some of you know that I am gradually transitioning to a raw, vegan diet. I’m already a vegetarian, but I’d really like to become a “raw foodist” and eat only food that still has the majority of its enzymes available. As part of my raw food journey, I’ve been learning how to prepare many unique recipes. One of my favorites is a dessert called “raw cheesecake” made with cashews, lemon juice, and dates. It is the best tasting “cheesecake” I’ve ever had! I actually love it more than traditional cheesecake… really, I do.
One of the ingredients for the raw cheesecake is organic coconut oil. I use coconut oil on my skin and in my hair, but never really used it in food that much until I started exploring my new way of eating. I used Tropical Traditions Coconut Oil and I really love the quality and consistency of this oil. When I opened the jar, I immediately noticed the rich smell of coconuts. The oil is smooth and pure, and is so versatile. It also has a wonderful taste that’s mild yet distinctive.

The raw cheesecake came out way better than I expected. I couldn’t believe how easy it was to make such a delicious and satisfying dessert. Using quality ingredients also makes a huge difference in the final outcome of any dish.
